Sawtooth Plantation, founded by John Cassimus, is a 1,400-acre luxury estate nestled just 40 minutes south of Auburn, Alabama. The property, known for its commitment to conservation, honors the legacy of its former steward, Mr. Jerry Banks, who planted thousands of sawtooth oaks and fruit orchards across the land. The name “Sawtooth” pays tribute to his vision, with these trees now standing as a living testament to a commitment shared across generations: to conserve, to protect, and to honor the beauty of this land.

This high-fenced estate is home to a genetically cultivated herd of world-class trophy whitetail deer, offering an unmatched hunting experience. Guests stay in private, thoughtfully appointed cottages and gather at the state-of-the-art lodge, where bespoke, farm-to-table culinary experiences celebrate Southern hospitality. At the heart of Sawtooth Plantation are its owners and hosts, John and Lexi Cassimus—two individuals united not only by their love for the outdoors and a commitment to excellence, but by a genuine passion for creating unforgettable experiences for others. Together, they’ve built a place where adventure, tradition, and hospitality come together in the most meaningful way.

John Cassimus

Founder of Sawtooth Plantation, John Cassimus is a renowned entrepreneur and accomplished outdoorsman whose life has been shaped by grit, vision, and an unrelenting drive to pursue what he loves. A seasoned bow hunter and world-record turkey slammer, John’s hunting career spans some of the most rugged and iconic landscapes across South Alabama, Texas, Canada, and Africa. In 2021, he set a National Wild Turkey Grand Slam Record, completing it in 45 hours, 52 minutes, and 41 seconds—an achievement that speaks volumes about his discipline, precision, and love for the chase.

But John’s story doesn’t begin—or end—in the field. He first gained national attention as the driving force behind Zoë’s Kitchen, transforming his family’s restaurant from a single location in Alabama into a fast-casual brand with over 200 stores nationwide. He later founded Maki Fresh and Jinsei Sushi, and more recently, launched Marky’s Kitchen in Cahaba Heights—an homage to his father and a return to his culinary roots. Today, he remains a force in the hospitality and business world, balancing his success as a restaurateur with his role as a brand ambassador for top outdoor brands like Hoyt Archery, Moultrie Cameras, Williams Knife Company, Spypoint, and Pilatus Aircraft.

 

At Sawtooth, John channels all of these passions—culinary, entrepreneurial, and outdoors—into a one-of-a-kind experience that blends ethical hunting, high-touch service, and unforgettable meals prepared from the land he loves.

Lexi Cassimus

Lexi Cassimus is a dynamic entrepreneur who began her career in the insurance industry, founding and scaling a successful adjusting firm before answering the call to hospitality. For the past six years, she’s brought her business acumen, deep love for people, and unmatched eye for detail to the luxury outdoor space.

 

Now serving as Vice President at Bronze Buffalo Club Companies in Wyoming and Idaho, Lexi has established herself as a leader in curated guest experiences. At Sawtooth Plantation, she oversees everything from world-class accommodations and bespoke guided hunts to elevated culinary events—working closely alongside John to ensure every detail is thoughtful, intentional, and deeply personal.
